don’t forget your vitamins!
vitamin c, that is!
i have no idea why i didn’t think of this sooner - but - this weekend a few vitamin c tablets came in very handy for me.
we went on a long bicycle ride followed by a lovely picnic - made even better with sliced apples that didn’t turn brown. how did they not turn brown? magical vitamin c!
ascorbic acid (vitamin c!) inhibits oxidization in fruits like apples, pears, nectarines & peaches. perfect for slicing ahead - and so very handy when preparing pounds upon pounds of fruit for canning!
asorbic acid bath
you need:
- 2 quarts cold water
- approximately 1 teaspoon crushed vitamin c tablets (or ascorbic acid - which can be purchased at health food stores)
make the bath:
- stir the vitamin c powder into the cold water
- add sliced fruit
you can leave the fruit in the bath while you’re preparing your jars & canner for canning, or you can simply let the fruit hang out in the bath for at least 15 minutes, then fish out the fruit and pack into a picnic, add to a fruit salad or…or…whatever it is you’ll do with fruit that has just had a vitamin c bath.
