quick cucumber pickles

confession time:

i love pickles on grilled cheese sandwiches.

it all started at eddie’s grill - my home away from home every summer until i left my actual home (geneva, ohio) for college. working a summer job at eddie’s was like going to an all-day slumber party with your closest friends. add in french fries & all-you-can-eat ice cream, and you’ve got eddie’s in a nutshell.

while eddie’s is famous for burgers & dogs, my fave break-time treat was a grilled cheese with pickles. seriously delicious.

but now, with my refined tastes and everything (ahem,) i look to pickles as an accompaniment to most meals involving pork. like cole slaw on a good pulled pork sandwich, i think pickles are just as delicious.

enter darina allen. of course she has a pickle recipe that takes about 12 seconds to prepare and is totally, totally delicious.

we keep a jar of these easy pickles in the fridge at all times. just in case i feel like reliving my youth via grilled cheese.

you need:

  • 2 lb unpeeled english cucumbers, sliced medium thin
  • 2 small yellow onions, sliced thin
  • 12 oz sugar
  • 1 T kosher salt
  • 1 cup apple cider vinegar

to prepare:

  1. mix the cucumber slices & onion in a large bowl.
  2. mix together the sugar, salt & vinegar in a large vessel.
  3. pour the liquid over the cucumber slices & onion - mix well to combine.
  4. pack the pickles into jars or other lidded containers and store in the fridge.

    dinner time. lunch time. snack time.
    i love food all the time. thankfully, i have a job that involves food.
    which is fun. and amazing.
