pork. it’s what’s for dinner. and lunch. and dinner.

pork shoulder.

i’m kind of totally into meat right now. i blame this place for that. not only can you go in and pick up totally fantastic butchered meats, but they’ll also make you a sandwich. which makes me extremely happy. (and if you like salami, go there RIGHT NOW, and order the #3.)

anyways, i picked up an 8+ lb pork shoulder this week. as i mentioned, i bought it at laurelhurst market, but the pig actually came from this place. over 8 lbs of pork is kind of a large hunk of meat. i carried it into my house like a baby. i rubbed it with spices and seasonings. i put it in a dutch oven. i put the dutch oven in a 300 degree oven. i left it there for hours & hours. at the end of it all, it was falling apart and crazy delicious.

i had big plans for all that slow cooked porky goodness. but the dish i had dreamed up only used 1 lb of the delicious stuff. so, naturally, i’ve got a lot of leftovers, and i’m planning to freeze them.

i’m going to portion the pork into reasonable packets of 3-4 servings. i’m going to seal those packets up the best i can. i’m going to date & label those packets and freeze them. later this week i’ll thaw a packet, make tacos and tell you all about it. i’ll also make faux bbq and tell you about it.*

pork is so good.

ps: i know next to nothing about meat. or butchery. or any of that stuff. i walk into a place like laurelhurst market and must look like a complete boob. but, i explain to the (usually very cute) meaty man behind the counter what i’m looking for/planning to do and he makes great suggestions and i leave with some meat AND a bounce in my step because he could have treated me like i’m a complete meaty idiot but didn’t. for this reason alone, i think anyone who can should buy meat at LM.

*freezing meat - at least pulled pork shoulder - is genius. i highly recommend that you cook pounds & pounds of meat and then freeze some of it. delicious pork tacos in the blink of an eye!
