men & sausage
i don’t know what it is, but both of the men in my life love sausage. aside from bbq flavored pop chips (which are currently strictly forbidden in our house,) sausage is the food both my thirty-something year old husband and two year old son can agree on. that’s weird.
for a while i was buying quality frozen sausages that the husband could ‘cook’ at breakfast and add to whatever egg-of-the day he planned to eat. i’d also ‘cook’ one for the kid to eat along side his waffles or pancakes or whatever. then i started actually looking at the prices of such extravagant indulgences…holy crap! that’s a lot of money for eight sausages, jami. what are you thinking?
during a trip to my local market, i was standing in front of the meat counter looking at the 32983 types of sausage they offer - then i saw it…bulk breakfast sausage. from a quality provider. about 12 times cheaper than frozen sausage - it was difficult for me to hide my excitement as i ordered 2 lbs of it from the meat lady across the counter.
i got my sausage home and did the following:
- lightly coated two sheet trays with olive oil.
- took my kitchen scale out of my cupboard and lined its surface with wax paper.
- portioned the sausage into 2 oz balls, then formed them into patties.
- placed the patties on the sheet trays previously rubbed with oil.
- placed the sheet trays in a 350 oven until sausage was cooked (10-ish minutes.)
- let the sausage cool slightly, then placed the sheet trays in the freezer.
- waited twenty four hours.
- put the frozen patties into freezer bags and put them back in the freezer.
- instructed husband to ‘cook’* the patties just as he would the sausage we used to buy.
you have no idea how happy it made me to find a way around the expense of frozen sausages. win!
*these sausages can be thawed either in a frying pan while cooking eggs OR in a 350 degree oven until thawed and as hot as you want them. very very easy.*
