pizza so fast.
oh dear me, i feel so busy. and a little stressed. you know this feeling, right? one thing that makes me happy is that i’ve got dinner tonight covered.
thanks to a stock of pizza dough and a supply of frozen pesto, we’re having pizza. and you could be having homemade pizza too if you’d just make yourself a few batches of dough to have hanging around in emergency oh-my-god-how-is-it-already-5 o’clock-i-bet-traffic-is-going-to-be-horrible-and-i-still-have-to-make-dinner situations (which is the situation i find myself in at this very second).
so, to break it down AND to gather it all in one place:
i’ve posted a pizza dough recipe. i’ve posted a pesto recipe. now, what are you waiting for? it’s time to make pizza!
pesto pizza
thaw your pesto.
thaw your dough.
shape the dough into one large pizza or a few small. spread the pesto on the dough - one large pizza needs about 4 ounces of pesto.
from here top with cheese (goat cheese!) sundried tomatoes, olives, sliced tomatoes, salami - anything your little tummy desires.
bake on a pizza stone at 425 for 12 or so minutes - dinner!
onion pizza
a few posts ago i wrote about the balsamic onions i made. these are SO good on a pizza. if you make a jar of them and keep them in the fridge, they can elevate a simple pizza to something extra special with no work at all. genius!
after you’ve shaped your pizza dough, top it with a bit of olive oil. spread some delicious cheese around and then scatter the onions. bake as directed above. seriously good.
i feel it’s my duty to share with you my tips for getting dinner on the table fast - dinner that doesn’t come from a box or a drive-up window. a bit of work on the weekend or in the morning before work (or when everyone else has gone to bed!) can really save you time during the week. and simple items like dough & pesto can become perfectly great dinners in a snap. consider these items your dinnertime building blocks. what can you put together?
